Most of you know that I’m a big chocolate lover. Well, it wouldn’t surprise you then to learn that my daughters love chocolate just as much as I do! In honour of our love for chocolate, I decided to make and share a yummy recipe for chocolate cupcakes with you!
They are super yummy! Let me know what you think …
2 1/2 cups of all-purpose flour
1 1/4 teaspoons baking powder
1 1/4 cups unsweetened cocoa powder
1 1/4 teaspoons salt
1 1/4 cups buttermilk
2 1/2 teaspoons baking soda
2 large eggs
1/2 cup plus 2 tablespoons vegetable oil
1 1/4 cups warm water
2 1/2 cups sugar
1 1/4 teaspoons vanilla extract
2. In a large bowl, sift together cocoa, flour, sugar, baking soda, baking powder, and salt. Whisk in eggs, the water, buttermilk, oil, and vanilla. Ask an adult to help you use an electric mixer to beat the mixture until smooth and combined, about 3 minutes.
3. Dived batter evenly among muffin cups filling about 2/3 full. Put the tins into the oven to bake, rotating pans halfway through. Cupcakes are done when a toothpick inserted into the center of a cupcake comes out clean, about 20 to 25 minutes. Transfer cupcakes to wire racks, and let cool. Cupcakes will keep covered, for up to 3 days. Decorate with frosting if you wish.
Recipe makes 2 dozen cupcakes.
