chocolate/peanut butter rice krispie treats #gluten-free

So not only is the husband not allowed to eat Gluten. He can no longer eat foods that contain corn of any kind including corn starch, corn syrup or Xantham Gum.  Try finding foods that don’t contain any of those three ingredients. It’s almost impossible.

So when I came across a recipe for a sweet treat hubby can eat, I thought I’d try an old favourite and tweak the recipe a bit so it was hubby-friendly.

RiceCrispieTreats

Ingredients

3 cups of Rice Krispies
1/2 cup peanut butter
1/2 cup Agave syrup or honey
1/2 cup chocolate and/or butterscotch chips

Directions

Measure 3 cups of Rice Krispies and put them in a bowl.

Heat up the peanut butter and syrup in a pot until melted.

Pour mixture into bowl of Rice Krispies and mix.

Pour blended mixture into an 8 by 9 deep dish.

Put in refrigerator to cool and set.

Melt chocolate chips in a glass bowl over top of a pot of boiling water until melted and pourable.

Remove Rice Krispies from refrigerator and pour melted chocolate mixture over top of the squares and spread evenly until covered.

Place back into refrigerator until chocolate is cooled and hardened.

 

Serve with coffee for husband OR milk for the kiddos.   A great twist on an already favourite treat!

    Oh those look delicious!! I have a similar recipe made with Cheerios – which of course are NOT gluten free, so this is a great option to have.

      I’ve tried making these with cheerios too. Hubby just can’t eat them, poor guy 🙁

      They are good. Hubby isn’t a fan of the amount of chocolate I added but I am!

    These look so easy to make, gluten free or not. I can only imagine the difficulty going through food intake are your home. And outside too. Awww. I guess a lot of experimentation with recipes huh?
