What’s for dinner tonight?
Pizza … made with a cauliflower crust.
WHAT !?!?
You heard me! I tried this recipe myself and it’s so much tastier than it initially sounds. Of course choosing the right toppings for your pizza makes all the difference in the world.
Wheat Free Cauliflower Pizza
1 medium sized head of cauliflower
1/4 teaspoon salt
1/2 teaspoon dried, crushed basil
1/2 teaspoon dried, crushed oregano
1/2 teaspoon garlic powder
1/4 cup shredded Parmesan cheese
1/4 cup mozzarella cheese
1 egg
optional 1 tablespoon almond meal OR rice flour
Preheat oven to 450 degrees. On a cutting board, place a large piece of parchment paper and spray it with nonstick cooking oil.
Wash and towel dry a medium size head of cauliflower. Cut off the florets. You don’t need much stem. Pulse in your food processor for about 30 seconds until you get powdery snow-like cauliflower. You should end up with 2 to 3 cups of it. Place the cauliflower in a microwave safe bowl and cover. Microwave for 4 minutes. Dump cooked cauliflower onto a clean tea towel and allow to cool for a bit before attempting the next step.
Once the cauliflower has cooled enough to be handled, wrap it up in the dish towel and wring out all the excess water. You want to squeeze out as much water as possible. This will ensure you get a chewy pizza like crust instead of a crumbly one.
Dump cauliflower into a bowl.
Add 1/4 cup Parmesan cheese, 1/4 cup mozzarella cheese, 1/4 teaspoon salt, 1/2 teaspoon dried crushed basil , 1/2 teaspoon dried, crushed oregano, 1/2 teaspoon garlic powder. I also added 1 tablespoon of rice flour. Then add your egg and mix it all with your hands.
Once mixed together, use your hands to form the dough into a crust on your oiled parchment paper. Pat it down thoroughly so that it’s tightly formed together. Don’t make it too thick or too thin.
Using a cutting board slide the parchment paper onto your baking sheet in the oven. Bake for 8 – 11 minutes, until it starts to turn golden brown. Remove from oven.
Add however much sauce, cheese, and toppings you want. I added goat cheese which gave so much more flavour to the pizza. Mmmm, my mouth is watering as I type this!
Slide parchment with topped pizza back in the hot oven and cook for another 5 to 7 minutes until the cheese is melted, bubbly, and slightly golden.
The slices will be a bit floppy but they shouldn’t be crumbly.

That looks good! I have seen this idea going around, may have to try it! Love pizza, we go up to a local bakery and they have a ‘kit’ with the dough, sauce, pepperoni and cheese all portioned and packed up for $10.00. The dough it so good and I divide it into 2 pizzas so I can mound the adult one with veggies!
What a creative GF idea! I wish I could have dairy – this sounds delicious!! Will definitely pin to my gluten-free recipes board for those that can enjoy it.
Maybe you could try it without dairy. Replace the dairy with water? Ya never know!
I got the idea from a long-time friend. She sent me the recipe and I tweaked it a bit to fit the likes of my family. Such a successful meal!

You will not regret it. The more topping, the yummier. Adding goat cheese to the toppings makes it so damn good! If you like goat cheese, that is.
